No. Sorbate will NOT stop an active fermentation. No chemical addition that results in a wine that is safe for humans to drink will.

Sorbate + K-meta acts as birth control for yeast, e.g., preventing reproduction, so a wine containing sugar but not enough active yeast to consume it, is protected from a renewed fermentation.]]></description>
