Kombucha Batch #24-03

As is my habit, I started this batch immediately after bottling the last one.

I’m using the same ratios as I did with the last batch:

  • 4 Tbsp Lychee Black Tea
  • 2 liters boiling water

Let steep 15 minutes.

Drain the tea, stir in:

  • 1 cup sugar

Add large mug of ice cubes and let cool to 75 F, which may take a few hours.

Once it’s cool, add to the kombucha jar, which contains the SCOBY and 1 cup of liquid from the previous batch.

As seems to be my normal, I let this one brew longer than I planned.

For bottling I used 1/4 cup Simply Nature Super Food juice + 1 Tbsp sugar per 12 oz bottle. This netted 8 bottles, as I lost kombucha volume to evaporation and to the size of the SCOBY.

I’m going to let this set at room temperature for 2 weeks before refrigerating. I left the last batch longer and got a lot more carbonation. Not like a beer or sparkling wine, but a nice level.
