1986 Elderflower

I recall that I saw a package of dried elderflowers in The Winery (this is years before I became a partner). It struck my fancy so I gave it a try.
Ingredients
| Fruit | 4 oz dried elderflowers + 2 lemons |
| Water | 1 gallon |
| Sugar | 4# |
| Acid | 1 tsp citric acid |
| Nutrient | 1 tsp nutrient + 1/2 tsp energizer |
| Pectic Enzyme | 1/2 tsp |
| Yeast | Red Star Epernay II |

| Afterthoughts | What I remember of this wine is that it wasn’t that interesting. I chalked it up to once tried, then never repeated. 🙂
Although it doesn’t specify, I assume that when I added sugar on 10 June 1986 I was sweetening the wine, so I must have stabilized it with sorbate and sulfite. |
