June 2021 – I’m honestly surprise I don’t have notes on this wine. I recall it very distinctly.
This was my first concentrate wine — I purchased a 2 quart can of cherry concentrate.
It was my first use of pectic enzyme. The wine had what looked like silver ribbons in it, and Chris (owner of The Winery, later my business partner) suggested pectic enzyme. It eliminated the ribbons in a matter of hours.
It was also my first use of Sparkaloid in clearing a wine. This wine was crystal clear.
In reality, it probably wasn’t that good, at at the time I really liked it and was sad when the last bottle when down the hatch.
