Kombucha Batch #26-01

My last batch of Kombucha was ignored too long, and grew black mold. I tossed the batch, including SCOBY. That was a while back, and the “kombucha bug” bit me again. I received my new SCOBY today.

I’m using the same ratios as I did with the June 2024 batch:

  • 4 Tbsp Lychee Black Tea
  • 1 liters boiling water

Let steep 15 minutes. Drain the tea, stir in:

  • 1 cup sugar

I immediately added enough ice to make nearly 2 liters, which I stirred every 10 minutes until the ice was melted. Poured it into the gallon jug, added the SCOBY, and enough water to fill the jug.

As seems to be my normal, I let this one brew longer than I planned. I thought it was about 6 weeks … until I checked my notes. 10 weeks???  I seem to have lost track of a month.

First I removed the SCOBY and reserved 1 cup liquid for the next batch.

To each 12 oz Molson’s beer bottle I added 1/4 cup Simply Nature Super Food juice + 1 Tbsp sugar per 12 oz bottle. Then I filled each to half way up the neck with Kombucha.

This netted 8 bottles, with a bit less than 1 cup left over. I added some juice to it and drank that while bottling.

I’m going to let this set at room temperature 1 week before refrigerating.
