1986 Elderflower

October 2018 – I recall that I saw a package of dried elderflowers in The Winery (this is years before I became a partner). It struck my fancy so I gave it a try.


Ingredients

Fruit 4 oz dried elderflowers + 2 lemons
Water 1 gallon
Sugar 4#
Acid 1 tsp citric acid
Nutrient 1 tsp nutrient + 1/2 tsp energizer
Pectic Enzyme 1/2 tsp
Yeast Red Star Epernay II

Afterthoughts What I remember of this wine is that it wasn’t that interesting. I chalked it up to once tried, then never repeated. 🙂

Although it doesn’t specify, I assume that when I added sugar on 10 June 1986 I was sweetening the wine, so I must have stabilized it with sorbate and sulfite.
