Kombucha Batch #23-05

Immediately after bottling batch 23-4, I started this one.

After bottling the last batch, I immediately cleaned the jar and put the SCOBY and reserved 1 cup liquid in it. There isn’t any point in hesitating, as then I have to take care of the SCOBY. Immediately starting the new batch makes the most sense.

As with previous batches, I brewed the tea using 2 rounded tablespoons of black tea in 2 quarts boiling water. This time I steeped it 15 minutes, to get more tea flavor. It also increases the caffeine, but should be fine.

I had other things to do, so I let it cool on the counter for 1 hour then added ice.

I have a bottle of pomegranate juice. I’m going to use that for at least part of the batch, possibly all, depending on how the cranberry (batch #23-04) tastes.

I just got around to bottling it with 1/4 cup pomegranate juice and 2 tsp sugar in each 12 oz bottle. It’s definitely tart.
